Tasty Tuesday--Zucchini Lasagna

Preheat oven to 400 degrees.
Ingredients:
Prepared tomato sauce OR one 14 oz can of tomatoes
1 clove of garlic
2 Tbsp olive oil
Red Pepper flakes
1 large zucchini
1 cup sliced mushrooms
1 container part skim ricotta cheese
1/2 cup shredded part skim mozzarella cheese
Use prepared sauce or puree 14 oz can of tomatoes with 1 clove of garlic and olive oil, add red pepper flakes (flakes are optional).
Heat 1/2 tsp olive oil in medium skillet. Cut zucchini lengthwise into 1/2 inch slices. Saute slices with garlic for 2 minutes on each side until tender. Saute 1 cup sliced mushrooms with a pinch of salt for several minutes. Set aside.
In small baking dish, layer 1/2 cup sauce, 1 slice of zucchini, 1/2 cup part skim ricotta cheese, 1 Tbsp shredded part skim mozzarella and mushrooms. Repeat with remaining zucchini and mushrooms.
Bake for 15 minutes and enjoy!
