Tasty Tuesday--Two Quick Lunches

Greek Yogurt Chicken Salad

3 Tbsp nonfat Greek Yogurt
½ tsp mustard
1 tsp low fat mayonnaise
2 Tbsp chopped celery
½ medium carrot chopped
1 Tbsp chopped parsley
1 Tbsp chopped chives
1 cup shredded cooked chicken
1 cup chopped romaine lettuce
1 cup sliced cucumber
½ tsp canola oil
2 Tbsp white vinegar (I prefer white wine)
Pinch of salt


Combine ingredients down to chicken. Whisk together the canola oil, vinegar and salt. Toss with cucumbers. Place cucumber mixture on top of romaine lettuce and top with chicken salad
mixture.
Quinoa Chicken Salad

Cook 1½ cups of quinoa in low sodium chicken stock for about 15 minutes. Add the following:
¼ cup diced cucumber
¼ cup diced red bell pepper
¼ cup corn
3.5 oz cooked shredded chicken
Mix together:
2 tsp olive oil
Juice from ½ of a lime
1 Tbsp rice wine vinegar
1 Tbsp chopped cilantro
1 Tbsp chopped scallions
½ tsp cumin
Pinch of salt and red pepper flakes
Pour mixture over salad ingredients and toss.
